For April, we are featuring an item that is little known, but makes a huge difference to our morning coffee or tea: sugar.
Sourced all the way from Okinawa, Japan, our sugar comes from Marukichi sugar, a supplier known for its traditional and unique sugars, made with traditional techniques and a rigorous concern for purity, quality, and of course, flavour. Our sugars have not been through a centrifugal process, meaning that they are unrefined, and hence retain the natural flavours and characteristics of the original sugarcane.
Available in a range of formats, the most popular are our sugar cubes and AQUA sugar (liquid sugar), and these are also used in our cafés. The sugars are coded according to their sweetness and taste, with 01 being the mildest, and 03 the closest to sugar cane syrup in terms of sweetness. Our 03 AQUA sugar can also be used as an alternative to maple syrup together with pancakes.
