Inspired by the traditional Japanese custom of Hanami, or flower viewing, we have created a limited edition cake for the Spring season that will be available at our cafes from 30 March to 30 April.
Bringing to mind cherry blossoms, the dainty cake is a beautiful composition of poached apples, moscato jelly, and cheesecake, all seated atop a financier (almond cake) base.
The sweet moscato flavour is complemented by the mild tartness of the apple, which is rounded off by the smoothness of the cheese. The buttery crumbly texture brings everything together, resulting in a satisfying dessert that looks sweet but is not cloying.
